Thai Stir Fry Eggplant with Salted Soy Bean

Simple to prepare and it is served on a bed of steamed jasmine rice.


.2 Long eggplants ,Sliced .200 g Pork mince

.1 cup of Thai basil

.3-4 Thai Chillies, finely chopped

.4-5 cloves garlic, finely chopped

.1 tsp Sugar

.2 tbsp Oyster sauce

.2 tbsp Salted Soy Bean

.4 tbsp Peanut oil for stir fry

.1/2 cup of palm oil


1.Heat palm oil ,stir-fry eggplant Until browned

2.Heat peanut oil ,stir fry garlic and chilli ,stir a few seconds Followed with pork mince ,Stir-fry a minute or two, or until most of the pork is cooked through.

3.Add oyster sauce ,sugar ,salted soy bean .stir-fry another 15-20 seconds. Then add Thai basil leaves. Stir and mix well.
